Signal doesn't refuse to talk about that, that's a big advantage of using their app, so much so is basically part of the advertising. They simply don't collect metadata.

Also, the thing Signal refuse to talk about when asked directly is the metadata - all that data they are collecting about your network, your messaging habits, who when, how often etc.... who cares what people say - it's who they are talking to and when that is interesting and valuable!
