I need a lightning address and wallet I can use on Nostr that doesn't require email like WoS or Alby. Is there anything that wont require me to pay to open a channel? Or is that my only option?

Yes

So i use minibits to receive because they provide the address you pay in sats.. i can refill my minibits or move from minibits to my Phoenix wallet. Thats my setup right now. No email for any of these

I think that's your only option, any wallet that has a ln address seems to require email and or phone number
