Actually did it on a gas grill indirect heat - had some cherry wood chips in there for smoke. 225 for around 4-6 hours getting it up to 165. Then wrap it butcher paper and turn up to 250 to get the meat up to around 200-205, which takes another 3-4 hours. Then let it rest for an hour. 10/10 amazing.
