Any good suggested sources that can explain what what a bitcoin node us and how a regular pleb like me can run one?

If you want a dedicated machine for it check out this guide to Umbrel self-hosted server. If you go this way you can run a lightning node too. I think you can also just download Bitcoin core on an old laptop too if you wish but I never looked into that as much.
