Give them a lnurl QR code and offer to buy all their bitcoins at the value of transaction.
I did this for Sababa Restaurant in #chiangmai in 2019.
Now they keep all their bitcoins.
I used to use tipcards.io, but I'm starting to print Cashu QR codes.
