If you want to run more than a node, you can install Proxmox and separate it into a few virtual machines.

Was thinking of picking up a beelink and migrating my proxmox vm to it. Do you have any issues running proxmox on the beelink?

I am not using a Beelink, so I can't confirm personally. But since it's just Linux, any decent mini pc should be able to run Proxmox.
