Centralized bullshit servers like nostr.build which as far as I know hasn't really deleted or throttled my content even though I'm pretty sure I've called the owner a retard and stuff

Yess relays are the storage of our signed " events" is what we call them here on nostr.

You can run your own relay to store your own data if you like, but is not necessary.

You can store them wherever. For example, I store mine on my person relay server and my personal media server. You can use your own or use servers ran by other people in the community. Thousands exist.
