It's a lot easier for the state to uncover the details of every monero transaction than to do the same for lightning or cashu.
All three are good technologies serving their userbase.

I don't think any of these fully cover details of transactions to begin with, they just require parallel construction to use the information until society collapses enough to unleash databases with less limitation
Cashu is no good. And lightning is overly complex for most human beings to self custody.
However for a simple to use and easy enough to keep grandma private you would need monero.
