Smoke Roasted Pork Tenderloin

Rub

Rub:

2 tablespoons paprika

4 tablespoons coconut sugar

1½ tablespoons kosher salt

1 tablespoon fresh ground black pepper

1/2 tablespoon chili powder

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon ground mustard

½ teaspoon cayenne - optional for this cook

2 pork tenderloins trimmed and silver skin removed

About two hours before cooking

Pat dry

Season with Rub and let rest for at least two hours

When it’s time to start grilling:

Fire up grill / smoker

When appropriate for your grill add a mild wood like pecan. Once up to temp (350)

Smoke/Roast and pull off a little early to let rest to 145. I like this cooking tenderloin at this temp because I think searing becomes optional. If you want to sear go ahead and you can even take your temperature all the way down to 250

If sear is desired: Once you have removed tenderloins from the grill, sear for one minute per side in a hot cast iron pan check after 30 seconds to be careful not to let sugar burn
