What does freeze drying candies accomplish?

It was some left over Halloween candy. Basically I use it as filler to make a full load. It makes it interesting to eat as well. People love it'

25 or so year shelf life. Preserves nutrients better than other methods. Usually preserves food texture better as well. To have food in storage when the grocery stores run out (self resilient).

Have you tried to live a month off of your freeze dried / canned foods? How much time / energy does it take to reconstitute it?

I’ve notice that freeze dried stuff is rarely vacuum sealed. Is that something that needs to be done for extended storage (5 + years) to maintain the preservation?

Again, I’m just very curious about it.

I don't own a freeze dryer, but it's near the top of our wish list so I've been learning a lot. The time and energy component is mostly upfront. When consuming it's usually just adding water back in and heating to temp. Storage is usually with mylar bags or otherwise air tight containers and oxygen absorbers.

I've eaten a lot of it. Any food that I rehydrate has been just like fresh. Just add hot water. The best storage I've found is mylar bags and canning jars. I tried some plastic lined paper bags, but they didn't work well.

It does preserve food really well. The shelf life is longer then any other method i know. Plus it preserves flavor great.
