I love cheese, too. My theory on food has been that all food can be improved by adding cheese or chocolate. I have since amended my theory to all food can be improved by adding cheese, chocolate, or bacon.
Sadly, I have developed some slight food sensitivities, so I am taking a break from cow dairy while I heal my gut. I am limited to goat cheese at the moment. I like goat cheese a lot, but miss the variety of cheese I used to eat. I can give it up for a short period, but I will not give up cheese long term if it is anything else than deadly. Cheese is too important.
