LATAM availability seems like a good first step. Mandarin, Hindi, German and others are on my radar though. Any other suggestions?

I think Latam and China sound great and other regions where English is not so ubiquitous, like Russia or the Middle East.
I would exclude most of the Western world, Germany for instance, it’s almost like picking Scandinavia, everyone speaks English to a very good degree and can understand your guides already. Just my 2 sats ☺️

What about portuguese brazil is many people
