Is there a reason to not add as many relays as possible?
yes. relay choice is a critical part of nostr. some relays have content I don't want to see.
adding too many relays can also slow your client and stop you from seeing good content

do you use multiple clients? there can be race conditions if you use two simultaneously.
I've only been using amethyst recently. I use plebstr sometimes, but I have never added the relay to my list.
It adds because of search (NIP-50). Otherwise search doesn't work.
