It's actually very easy with the right kind of specialized Wordpress hoster. If you can't log into WordPress, the WordPress hoster shows a list of critical errors in their dashboard and in the log files. The error message then hints you to the plugin that caused the error. Then I just deactivate that plugin, also in the hoster's dashboard, and website is accessible again.
