How often are grapheneOS versions released? Is it like Amethyst where no human being can possibly update as often?
As often as is necessary. Can be weekly or monthly or simply as required.
Can also depend on update channel, Alpha and Beta may get more regular updates for obvious reasons where Stable will only see one when those have been worked through bug report dependent.
