On macOS Sonoma, connecting either Mullvad or IVPN while Tailscale is connected blocks all web traffic. This does not occur with Proton VPN. I cannot figure it out.

Tailscale and ProtonVPN don't play nicely on android, either.
Those are the two that *do* place nicely on macOS.
There are known serious issues on iOS bypassing VPN. Not sure on MacOS.
Prospective solution: configure VPN directly on your router that supports openWRT and wireguard.
Are all using wireguard as the protocol? Regardless you should be able to activate split tunneling to allow LAN access.
