Im a Pixel 4a user with GrapheneOS really like it. Works great. I'd assume the recent ones even better. I prefer smaller phones and the headphone jack on the 4a is a bonus.

On phones without jack input you can use an adapter. I do it for my Motorola
Yea I'm not a big fan of dongles I'd lose it easily.
About GrapheneOS it doesn't give me any issues. I think only thing avg user will miss is Google Maps. I do not think it makes sense to put google play services if your going run GrapheneOS for privacy and security. My car has built in GPS so it doesn't effect me. There is Open Street Maps that works pretty good too an alternative. Also If you never downloaded apks and are coming from an iPhone. You will have an adjustment period for sure but seems you have a Motorola so you should be fine there.

For what I use the Phone for GrapheneOS gets the job done. Its also a low cost entry a used pixel 4a-7a devices go for $100-300 so if you ever wanted to tinker can test drive it and if didn't like it could resell for almost same price you bought one used for.
If you are a wearables person there is an app called gadgetbridge that let's you get notifications to watch and get health data from it to phone where your in control of your own data which is pretty cool too. Only certain smartwatches are compatable though. Hope some of this info was helpful
From what I'm finding here in Europe they are fairly more expensive than that.
So you can't use Google Maps. What about Waze?
And other stuff like signal, Telegram, Twitter, Spotify, bank apps, etc?

I've been using GrapheneOS as a daily driver for over a year now, absolutely love it.
Although I wish I got the Pixel 6 instead of the Pixel 6 Pro.
The pro is like carrying around a fridge in your pocket.
