It's extremely common for vegans to feel positive benefits early on, if they are removing processed crap and replacing it with fresh fruits & veggies. Anytime you replace processed food with whole food, you will improve your health.
But...it's not until several months, sometimes years later, that the lack of bioavailable nutrients (which only meat contains) start to catch up with them, causing internal organs to break down and cause serious health problems.
Unfortunately, by this point, many vegans have built an identity around this diet, so they ignore their body's signs, pretend it's all OK, and the downhill slope into the laundry list of malnourishment side effects begins.
