I have childhood memories of enjoying a family recipe for Cornish game hen that had cream and lavender. I asked my grandmother for the recipe but she hasn’t sent it yet. I found quail at the butcher and decided not to wait, but try to recreate it or at least let it inspire me.

Whether it’s close or not to the original, I still don’t know… but I really liked it!

I roasted the quail over herbs like I roast chicken thighs and made a sauce from onion, garlic, white wine, lemon juice, cream, and lavender flowers. Served with chunky cut zucchini and mushrooms and some rice made with homemade broth.

Unusual and delicious…
