Take WalletOfSatoshi which has ~1500 channels for example: Everybody would like to have a channel with them since it's the most used custodial wallet. If they didn't set a minimum of 5M sats, they would have to manage thousands of connections more which not only is cumbersome, but also leads to a lot of network centralization.

Personally I run my node at home on limited bandwidth so I don't want or need to many small channels either.

Each node admin is free to set the min/max for channels according to their needs.
