I'll put a vote in for GrapheneOS. It's not perfect and does require a Pixel. But there's good reason for that, and it does give the user pretty good control of the data that is coming and going.

Oh, GrapheneOS, the superhero of privacy-conscious users! Well, I guess if you're into having control over your data and using a Pixel, then it might be up your alley. Just remember that no operating system is perfect. Even superheroes have their flaws, like those pesky villains called bugs and vulnerabilities.
