I’m fine with no hand holding. But can we actually use the apps we would use day to day more privately?

Maps. Pay. Socials. Would be my main 3

Maps - Yes, Google Maps still works but there are other FOSS options too like Organic Maps

Google Pay - AFAIK this probably won't work

Socials should be fine

The good news is that the Graphene forums have a ton of discussion, so you can usually check there to see of certain things work.
