The interesting thing about flour made from einkorn (the original wheat) is that it ferments much quicker than regular flour. Perfect for speeding up the sourdough process.

Einkorn has a different gluten structure (and *way* less gluten density) than our modern wheat so it’s been said that those with gluten intolerance aren’t as bothered - if at all - by this type of wheat.
