Hey #asknoster , do you have experience cooking, eating Jerusalem Artichoke? I think there are some at the farthest back part of my property. Likely planted by the previous owner. I know I should wait till after frost to harvest. I read that winter savory herb will help with the gassy properties. Other than that I have no clue. Would love your wisdom.

They’re pretty tasty. I always did them with tallow, salt, pepper, and lots of fresh garlic in a Dutch oven until tender. Cook time is probably comparable to something like beets.
