I know I should know this, but what would be the best payment strategy if someone wants to buy my book in fiat and I do not want to dox myself?
So far ppl have usually been fine using bitcoin, but lately a couple ppl want to pay with fiat

Depending on how many there are and how badly you need the money, consider asking them to donate so much to a charity of your choice and provide proof.
Great idea, could def do this for a few books. In general though I prefer to receive payment for the paperbacks as there is a print cost I need to cover, and my time.

What are your thoughts on finding someone to act as an agent and forward you the money via Lightning etc. minus some fee?
