Weirdly, GitHub Copilot gives me suggestions when I'm using my text editor to write prose. I thought it was meant just for code but turns out it is a generalized thing too. I wonder if I should try writing food recipes or something like that and see what it does.

Most likely the public blog data from GitHub's blog repositories (Jekyll) were included in the training data
It's most likely using ChatGPT training data. All LLMs can also work as predictive text engines because that's how they generate answers to your prompts to begin with. They're probabilistic models.
