Think i fibally got the picana perfect last night. Such a fantastic cut of meat.
Get coals to really high temp
Put picana on grill with the fat side down and sear. Wait for flames from the fat and leave half minute.
Turn over and sear other side
Move off coals for offset heat and close grill fir 15 minutes
Cut into 3-4cm cuts and back on the coals with closed grill for 3 minutes.
Maybe ill get corrected or chastised by a brazilian but it definitely came out perfect!
