Idk about regular beet juice but we like to drink leftover pickled beet juice. Sometimes I water it down with carbonated water & add maple syrup and it makes a pickled beet juice soda. Weird but kinda good

My wife’s Polish family makes a fermented beet juice that they swear by for all sorts of health benefits. I think they are nuts, but I eat beef organs, and they think I’m nuts. We are probably both right.
There’s only one solution. Beet fed beef.

I saw this recipe for beef heart tartare today… looks good to me.
INGREDIENTS
10-12oz beef heart, partially thawed
2 T capers, rinsed and diced
1 small shallot, diced
1/2 small roasted beet, diced
1 2 oz can of anchovies, diced
1/2 fermented pickle, diced
1 T chopped parsley
1 t Dijon mustard
salt and pepper, optional
4 egg yolks
sourdough bread, sliced and toasted
