When I publish a post where does it go? Is there a server somewhere? A database? I am aware how ActivityPub works but this here seems to be different

You will be connected to a lost relays. Your message will be spread to different relays. There is no master feed like Twitter. Everyone sees a slightly different feed depending on what relays they are connected to. You can add relays or remove them as you want.
I started googling in the meantime and if I understand correctly then relays store my posts? Per no master feed that is how Fediverse operate so that's no surprise for me (nor anything strange). I'm curious about lower-level stuff
