We already have stock pots we use for canning. What's wrong with the wifi or Bluetooth one? That's the one I was looking at. Mostly for infusing lard and tallow

Oooh, I never thought of infusing lard/tallow. That sounds brilliant. Thanks for the idea.

The Bluetooth one has rumors of slightly lower reliability. That’s all. If that’s an option you can utilize then it might be worth the trade off. I asked my wife and she said our base model is 9 years old. So, I guess it’s kind of inconsequential, it only boils down to a few dollars difference over the years.
