I've heard about the "plus" addition but I've also heard how they strip those out before sending emails. Anyine have experience with this?

This good for setting up unique email identifiers, but they are NOT anonymizing. So if your email is guyfawkes[@]gmail.com, your + version is just guyfawkes+something[@]gmail.com. That doesn’t really help you.
yeah they probably have ways to strip them now, this works with icloud too, doesnt work with yahoo/aol
