so, i've figured out i like my meat greasy and dry

thus, a grill that drains my meats is not desirable

but it should dehydrate my meats

kinda seems like maybe i prefer roast?

charring is also good, and that is a bit tricky in an oven i think?

Have you tried cold smoking and air drying? I enjoy the taste different trees add to the meat.
