It seems like, it's also redirecting the payments.

So should it be set up per project? Or do we just connect a wallet in general? Maybe it's redundant I just feel slow at these things🤣 is there a tutorial or best practice sheet for this?

You're login key will be connected to your wallet, you can create multiple wallet key & set the different wallets for each. We can make it project based too in future. I just don't want to over complicate things for now.
