You should average out the block times of the time you spent growing and then bottling. š

This is one of those things that people think they want until it comes time to actually pay for it to be implemented. This could work with extremely small batch stuff I'm sure but I've seen "small" wine operations and some of those tanks are fucking huge. I can't imagine doing this without some really expensive setup.

I suppose a birth date might make some sense, but wine isn't really the same at any particular point. I could say that the birth is when all necessary components are combined, but the alcohol component isn't there yet (and maybe other chemicals - I don't know the full chemistry). It's a super complicated expectation
This would be a lot easier with Bourbon since it doesn't age after leaving the barrel.
Considering wine isn't necessarily done until you drink it maybe putting in a harvest date instead?

The simplest solution I can think of is the birth of the batch, meaning when every component is combined. That would at least have the same label for every bottle of that particular batch container. But I've only toured a tiny winery once. I know fuck all

Make sure you have a healthy yeast to start. When the final gravity levels out, then wait a few weeks, if you can wait that long!
