I haven’t looked into freeze drying. Not sure how that would modify the consistency of the bars but worth considering. The dehydration does exactly what I want though for the banana powder though

Freeze drying makes for softer crumbs. Almost a dry sponge texture.

Yeah, wouldn’t work well then
