Without walking me through it here, I assume it is possible to utilise my nostrpleb.com account, and have that pointing to a BTCpayserver for my own node, rather than wallet of satoshi?

yes. for example, you can point moid@nostrplebs.com to moid@whatever.dynamicdns.tld running on your btcpay server.
