That's a very generalized statement... Heat can both influence and enhance the taste of food, but its effect largely depends on the context and how it is used in cooking. Flavors are enhanced when it comes to meats/vegetables/fruits for instance, by causing Maillard reactions, which 100% adds depth to food. Heat also releases aromatics from spices and herbs. Unless you're burning food, that's the only way you could ruin it.
