1 lb 80% lean, preferably grass fed
Form 4 large meat balls
Set out for 30 min
With 10 mins remaining, put skillet in grill, heat to at least 400F, cover closed
Season top of meat balls generously with Redmond real salt, fresh ground black pepper, garlic powder
Press meat balls on skillet into patties, seasoned side down, season tops
4 mins or until juices form on top, cover open
Flip patties, put chunk of pepper Jack on each
4 mins, lid closed (to help melt cheese)
Remove, douse with cholula hot sauce, enjoy
