I would see it the same way I would see getting paid in land, or in oil drilling rights, or in diamonds.
Bizarre, anti-rational from the payer's point of view, and probably something to quietly and quickly accept without making too much noise about it. In case they change their minds.
If you can pay in an ever-depreciating "money", why would you pay in an ever-appreciating form of property?
You wouldn't. As i said, if you have dirty fiat, give it to them (after all it was them who printed it in the first place). If you don't, you now can pay your taxes without the risk of using an exchange on your end.
