My favorite thing was an izekaya in Hakonne. We ordered Nasu dengaku off menu and it was just amazing
Sushi at 6am at Tuskigi fish market

3. visit Sukyo Mahikari’s World Shrine in the most beautiful town of Takayama (there I learned :ichigo - ichieh ☺️)
And just enjoy the ride.
Take Japan Rail Pass! Special for foreigners, take most trains (at least if that still exists) for quite cheap (order in advance! Got mine via Ictam travel apparently back in the day)
