Don't know enough about Alby to answer but clarifying what "non custodial" means for the noobs is very based of you 🤙
Backups work differently in Lightning. On-chain, your key can simply be turned into a BIP39 seed-phrase. In Lightning, this is not enough, because your channel states also need to be backed up.
LND used to provide a seed phrase that could be used to recover, but ONLY with another LND instance, and your channels would automatically be closed and funds transferred to your on-chain balance. Now you must keep backup states. Umbrel should allow you to back up your LND instance, which Alby Hub is just a front-end running on top of.
Okay. Are there instructions somewhere for how to backup your umbrel LND instance? And would you need to do this after every transaction if you were to keep your backup up to date?

My knee-jerk assumption about backups is, they are out of date each time you send or receive, since whichever channel the transaction went through has a new channel state, but someone with more LND smarts than me may know better.
It sounds like you use Alby Hub with your LND node on Umbrel.
Then Alby Hub just uses your LND node. The seed phrase is in your LND.
Alby Hub then does not even have that key and thus you can not see it there. You just need to have your LND backup as normal.
