the day when the dough starts to deflate makes the best tortillas. for my climate (70s) that is day 3.

have you done a winter in your home yet? if so how was it? how well does it hold wood heat?

Have not yet done a winter here so I'm not sure! For insulation the walls should be amazing (the ceiling as well - we put hempwool there) but our windows and door are old and single-pane.
