Crystallized ghee, shown on the right, happens when the ghee is bottled and left at room temperature. The crystallization occurs when it cools down really slowly.

No difference between this ghee nutritionally or storage-wise and ghee put in the fridge right after bottling, shown on the left.

Just cool to see the difference.
