The one on the left looks ready to go. The one on the right looks a little off although it may be the lighting.
You’re spot on. I didn’t weigh them when I started so was going by feeling and the one on the right needed more time
Next time I’ll actually weigh them
Also think I need more salt than was suggested
They look amazing!
Do you have a meat slicer? I think they make all the difference.
