I love doing yogurt experiments, but they don’t always have dramatic results.

This time, I could tell: the Maple Hill culture tasted more buttery, the skyr culture tasted more bland, and the small jar with both cultures in it was significantly more sour. I’m guessing that it must be because there was more culture:milk due to the size of the jar.

Intetesting! How has that been going?

I culture them separately but then I mix them together in a half gallon jar when I strain them. I think I like the blend the better than either by itself. Filmjolk is smoother and creamier, kefir is tangier and more sour but also more probiotic tasting.
