Why are liquid to lightning swaps better than pure lightning payments. Even with their confidential transaction model you still leave a on-chain trail for every purchase, right?

Because I can swap liquid to a non KYC custodial wallet and of course everything over Tor and vpn. Then it's virtually impossible to trace the funds to my identity.

It's ironically easier to trace if you use your own node.
