I'd recommend Breez. Can add channels to it and use dev tools. Has a basic integrated POS to support entrepreneurial mindset. Doesn't need to be backed up to Google/Apple as you can redirect to your own webdav.

Cons: it's mobile. It's got all kinds of features to promote spending (vendors, gift cards, v4v podcast), still requires training, it's sluggish at times
