Look into fermentation with salt. Especially hot peppers

I just pickled a variety of peppers using the quick pickle method, no canning. They stay good for a few months, but mine wont last that long. I added fresh onions and garlic in mine. Basically just simmered half apple cider vinegar/half water and salt, and poured in jar with peppers. You can find recipes online.

I love making lacto-fermentented relish with peppers. Easy, uses a lot of peppers, and delicious 😋
