Every man should have at least 3 quality knives. A chefs knife, a petty / pairing knife and a quality bread knife. A basic 250 + 1000 grit stone and a ceramic honing rod would round things out nicely. Keep things dry, keep things oiled, the knives will serve you well for decades.
