I cook a plantain in the microwave every day.

1. Take a green plantain. Not too fresh but not too yellow or black.

2. Use a knife to put a slit right down the middle. End to end.

3. Chop of each end which is inedible

4. Chop into four sections.

5. Cook in the microwave for about 3 minutes.

After it cools a little bit. Peel off the skin. The rest of the plantain can be eaten like a potato. It should taste a little like a potato.

Plantains eaten in this way have a lot of "resistant starch" which are more like fiber in other vegetables. If you cook a plantain which is more rip, soft and squishy, it will be very sweet and filled with sugar instead of "resistant starch".
